Raw and Cured at Lime Wood Hotel launches new breakfast menu

NESTLED in the idyllic grounds of Lyndhurst’s Lime Wood Hotel, Raw and Cured restaurant has recently reworked its superfood-inspired menu to offer light and bright breakfasts with an option to take away.

Open daily from 8am, the tranquil eatery is part of the hotel’s award-winning spa overlooking a beautiful courtyard garden. The central bar area is laden with berries, juices, preserves and other tasty offerings, with food prep undertaken in the main Lime Wood kitchens.

As well as serving hotel guests and health club members, Raw and Cured is open to the public and offers an array of healthy choices such as pressed fruit juices, salads and dishes inspired by a Mediterranean diet.

The menu has been revamped by the restaurant’s manager Ria Rhodes and Lime Wood chef director Luke Holder to offer a selection of healthy choices such as overnight oats with berry compote (£4.50), toasted muesli and coconut yogurt (£6.50) and buckwheat crepes with fresh berries and maple syrup (£6.50).

Nutritious pumpernickel rye bread can also be topped with banana, blueberry and Dorset apple syrup; crushed organic eggs, avocado and watercress, or goats cheese, honey and walnuts (£6.50) or for a more hearty option the R&C breakfast bowl features organic crushed eggs and avocado, Isle of Wight tomatoes, baby spinach and home fermented sauerkraut.

The Raw and Cured team hope the menu revamp will also serve as an excellent opportunity to promote the venue to locals as well as hotel guests.

Ria said: “The courtyard garden is absolutely lovely during the summer – it’s very sheltered with no wind so it’s a beautiful meeting spot to get together with friends or enjoy a healthy leisurely lunch.”

The ethos of the food bar is straightforward – delivering tasty, highly nutritious dishes that leave diners not only satisfied but feeling invigorated and refreshed. The main menu, served from midday to 6pm, changes regularly but typically features grazing boards, soups, raw food options and colourful salads, which can be boosted with added proteins such as high welfare poached chicken and sustainable Loch Duart salmon.

Food is sourced locally where possible, with Fluffets Eggs from Fordingbridge featuring heavily alongside New Forest Asparagus, which is cut and served on the same day during the harvesting season. The New Forest Fruit company also provides various berries including a variety of strawberry that is only available at Lime Wood.

Lime Wood chef director Luke Holder said: “We don’t prioritise local over quality, but we have really long established relationships; we work very closely with the Isle of Wight Tomato Farm – they now produce all our peppers and aubergines as well.”

Luke added: “I’d love to see Raw and Cured regarded more as an independent restaurant rather than an annex to the spa. We have rebuilt the whole restaurant team and changed the way we operate, the food we produce, and the way the menus are structured; I would love to see more local people coming in to give it a try.”
