Lymington pub The Ferryman Inn appoints head chef Jake Perry

A LYMINGTON pub has appointed a new head chef who is promising local, seasonal produce and foodie events.

Jake Perry will lead the kitchen team at The Ferryman Inn – formerly the Wagon & Horses – which is reputed to have been a pub since the 1600s.

From humble beginnings washing dishes in his mum’s Cornish pub as a teenager, Jake went on to work in restaurants in France and London before joining country pub the Yew Tree Inn in Berkshire, once owned by Marco Pierre White. He also did a spell as a private chef in Dubai.

The Ferryman in Undershore Road is managed by Katie Lockyer, who is aiming to bring a fresh look and feel to the once traditional tavern.

Indeed, this was one of the reasons she enlisted the culinary skills of 26-year-old Jake, with whom she has previously worked.

The two are steering a new course for the pub and restaurant, and the focus will be on the “simplicity of fresh, flavourful food complemented by exacting service”.

Katie said: “Customers can expect seasonal signature favourites and classic dishes with a twist – all of which will be made using locally sourced ingredients whenever possible.

“Our food will reflect Hampshire’s diverse landscape and revitalise culinary traditions.”

Jake added: “I’m delighted that we have such amazing produce here on our doorstep.

“Sourcing through local suppliers means we buy the best and freshest ingredients, at the best time to put them on your plate.”

Katie has big plans for the future, including regular foodie events like forager and chef evenings during which guests are taken through each of the courses and the ingredients used.

On selected Friday evenings during spring and summer, oysters and rosé will be served on the terrace, plus plans are afoot for special five and seven-course tasting menus. Sunday afternoons will be dedicated to roasts and musical entertainment by a live saxophonist.

Jake and the team will also be exhibiting at Lymington’s seafood festival this year.
